THE JOB: The Cosmopolitan of Las Vegas is looking for a skilled Assistant Chef to lead operations in our Convention & Banquets kitchen. This role offers a competitive base salary with commission potential and the opportunity to craft extraordinary culinary experiences. From intimate gatherings to large-scale events, you'll oversee the preparation, quality, and presentation of diverse cuisines, ensuring every dish meets the highest standards. As a leader, you'll mentor and develop Cooks and Master Cooks, fostering creativity, precision, and excellence in every plate. By collaborating closely with the front-of-house team, you'll help create seamless dining experiences that leave a lasting impression on our guests. THE DAY-TO-DAY:
Maintain quality and proper presentation of food Drive the customer relation management system by ensuring that all such orders are handled correctly Communicate with chefs, management, employees and guest efficiently with proper reporting, and meetings Schedule and maintain the budgeted labor costs as well as potential food cost Understand and utilize Amadeus, Stratton Warren, or Oracle system properly for purchasing, release orders and cost transfer
THE IDEAL CANDIDATE:
Two years of experience in a high-volume or large-scale production kitchen environment, such as conventions centers, main kitchen, employee dining room, room service, or catering and banquets Experience with cold kitchen operations or garde manger is desirable Familiarity with Banquet Event Orders (BEOs) and their execution Extensive knowledge and skill experience in all aspects of kitchen operations and equipment Proficiency in recipe development and menu creation, with a knowledge of soup, sauce, meat, fish, poultry, casserole, and vegetable preparations Ability to lead and mentor a team Experience managing employees within a collective bargaining agreement Bilingual in English and Spanish is desirable High School Diploma, GED or equivalent
