From your PASSION to ours

Lactalis Heritage Dairy, part of the Lactalis family of companies, is currently hiring a Cook Operator based in Wausau WI.

The Cook Room Operator in its most basic form consists of mixing/cooking cheese powder prior to sending it to whey Hydration while continuing to ensure food safety. The operator also needs to be familiar with the 20-hour wash up.

From your EXPERTISE to ours

Key responsibilities for this position include:

* Perform a pre-start up inspection; including sanitizing for the cook room start up.

* Fill weigh color and color tank.

* Perform numerous checks, Dry ingredients, cheese scale and cheese scale delivery checks, wet mix and wet mix delivery, bag filter, filter screen, cooker temperature, cooker hold time, mainline steam pressure, trombone steam pressure and magnet.

* Enter lot number and batch numbers for the ingredients on the cooker batch sheets.

* Assist Fresh Cheese Operator with EMFC barrels and plugging in AMF totes as needed.

* Assist in end of the week Dryer wash as needed.

* Understand importance of and complete basic trouble shooting.

* Complete equipment changeover, including lubrication of equipment, minor adjustments and preventive maintenance.

* Familiar with Quality programs, including GMP's, code dates, HACCP, Allergens, CCP, faulty/hold process and verifying raw ingredients.

* Observe and listen to equipment to detect possible malfunctions, such as rubbing, binding or plugging up, and report malfunctions to the Team Leader or Maintenance.

* Accurate and timely SAP entries.

* Complete sanitation as needed.

* Perform other duties as directed by the Spray Dry Team Leader and/or DRE as needed for efficient operation.

* Responsible for following Food Safety & Quality (FSQ) requirements such as GMP's and any other daily/job specific duties to support the implementation of QRMP including company policies and plant safety rules.

* Performs all applicable HACCP and Quality Guidelines.

* Observes all Safety, Environmental Regulations, Accident Prevention Procedures, Food Safety Procedure and GMP's.

* When proficient train employees as needed.

Education and Experience

* High School Diploma or equivalent.

* Manufacturing experience preferred but not required.

Knowledge, Skills and Abilities

* Must be able to do basic math, communicate effectively, read and write proficiently.

* Must complete the following training requirements/evaluations (30-60-90-120 Reviews)

* Certified Training and other training courses as required.

* Ability to work in a fast-paced work environment.

* Must be certified to operate a Fork Truck & Hand truck.

* Use a computer for SAP and Computer Based Safety Training, Calculator, Telephone, Scale.

* Operate various process equipment.
