Position: Sous Chef JOB OVERVIEW: Responsible for all aspects of managing the kitchen and kitchen personnel, ensuring the quality preparation of all menu items and proper handling/storage of all food items in accordance with standards. Coordinate the purchase of all food and maintain menus, maintaining approved food costs and labor costs. Scheduled time in this position is split approximately 50% hands-on culinary production and 50% administrative and management work, including scheduling, labor management, recipe and menu costing, ordering, receiving and inventory. TIME ALLOCATION AND ADMINISTRATIVE RESPONSIBILITIES: This position is structured as an approximately 50/50 split between hands-on culinary production on the line and administrative work required to run the kitchen. Administrative time is a required function of this role, not optional, and is expected to be completed on property during scheduled hours. Administrative responsibilities include, but are not limited to, the following:
The 50/50 split is a planning guideline. Actual daily allocation will vary with business volume, group and banquet activity, and staffing levels, and this position is expected to flex into production or service support when the operation requires it. Administrative work is not to be deferred or carried as unscheduled or off-the-clock time. REQUIRED SKILLS AND ABILITIES: Must have the ability to communicate in English. Self-starting personality with an even disposition. Always maintain a professional appearance and manner. Can communicate well with guests. Must be willing to "pitch-in" and help co-workers with their job duties and be a team player. Ability to transport cases of received goods to the workstations; pots and pans of food from storage/prep areas to the serving line. Ability to work with all products and food ingredients involved. Ability to operate, clean and maintain all equipment required in job functions. Ability to plan and develop menus and recipes. Ability to apply basic supervisory skills to plan, organize, direct, coach, train and discipline, as necessary. Ability to ensure security of kitchen access, products and hotel property. Ability to operate with stress, time constraints, physical activity and continuous walking. Finger/hand dexterity in order to operate food machinery. Ability to grasp, lift and/or carry, or otherwise, move goods weighing a maximum of 100 lbs. on a continuous schedule.
